Tomato Water
 
Ingredients:
4.00 lb Fresh vine-on tomatoes
2.00 ea Stalks of lemon grass
4.00 ea Serrano chiles
1.00 ea Small Bermuda Onion
2.00 pinches Salt
1.00 ea Cheese Cloth

Preparation:
Coarsely chop and puree tomatoes and chiles (add salt to taste) in a food processor in several batches.
Transfer pulp to a cheesecloth and suspend over a large stockpot.
Leave to strain until pulp volume has reduced by two thirds, about 12-24 hours
