			<content:encoded><![CDATA[<p></p><p>Savory means <span> pungently flavorful and not so sweet. One of the most savory cocktails got to be the Martini &#8211; but i`m not much fond of the Martini. </span></p>
<p><span>I`m a good friend with herbs and spices and the spices are cool stuff that you can do a lot of fun things with and get good results. My favorite spices and herbs in cocktails are mint, basil, cinnamon, coriander, vanilla, cardamom and all kinds of peppers.</span></p>
<p><span><a href="http://blog.mixoloseum.com/" target="_blank">Everybody</a> knows i also like sausages and my favorite is the spicy chorizo. I was in an experimental mood so i went and got me some spanish chorizo and a jalapeno pepper and made two mezcal infusions.<br />

<p><strong><span>SPANISH SMOKE</span></strong></p>

<p><span>2 oz chorizo-jalapeno infused mezcal </span></p>
<p><span>(Cut a few slices of the chorizo and dump into 2 oz mezcal, leave for about 1 day &#8211; or taste your way, i prefer a subtle flavour when it comes to meat. </span></p>
<p><span>Infuse another 2 oz  mezcal with a slice of slightly deseeded jalapeno for about 1-2  days, taste several times until you reach the level of heat desired. Then finally mix the two together at a ratio that pleases you. </span></p>
<p><span>I used 1.1 of each) This is enough infused mezcal for 2 drinks, the recipe is for one.<br />

<p><span>Juice of half fresh lime<br />
</span></p>
<p><span>0.5 oz simple syrup<br />
</span></p>
<p><span>Top with Tonic</span></p>
<p><span>Garnish with 3  speared </span><span>chorizos</span></p>
<p><span>The chorizo i used gave the drink i slight salty flavour, but as i infused it only to be very subtle it wasn´t disturbing. The syrup and lime also nicely balaces the saltiness while the jalapeno added that lovely bite. </span></p>
<p><span>Its not a drink i would have regularly but sometimes it can be nice with a drink like this, i wonder what <a href="http://www.gumbopages.com/looka/archive/2009-07.html" target="_blank">food pairing</a> would go with it?</span></p>
